Eating avocado toast has quickly become one of my favorite things to do. Avocado toast is so easy and delicious that it is so hard to pass up the opportunity to make some.
Although, I will say, I have been very slow to try different forms of avocado toast. I’m not sure why, I think maybe because the idea of avocado without chips (chips and guac, anyone?) has taken me a while to grieve, but I am finally understanding just how good avocados are with just about everything.
This recipe is one that I came up with on a whim. I wanted avocado toast but didn’t want to go through the process of making my Guacamole Avocado Toast. However,I also wanted my all-time favorite, Easy Breakfast sandwich which left me at an impasse.
This Sweet Sriracha Egg Avocado Toast is so good and so easy that it might be my favorite new meal. The sweet sriracha sauce that I drizzled over the fried egg and avocado added a sweet and spicy making the perfect match to this avocado toast recipe.
This Sweet Sriracha Egg Avocado Toast requires minimal ingredients and would be perfect for a breakfast or lunch meal.

Sweet Sriracha Egg Avocado Toast

Sweet Sriracha Egg Avocado Toast
Ingredients
- 1 Large Egg, fried
- 1 Large Avocado, mashed
- 1 Tablspoon Sweet Sriracha Sauce
- Salt to taste
Instructions

Fry your egg according to how you like it. Cut your avocado in half and remove the pit. Remove the avocado from the skins and mash in a bowl (or if you prefer your avocado sliced, you ca slice it).

Take one slice of bread (I prefer sourdough, toasted) and cover with your mashed avocado. Cover the avocado with salt to taste if you prefer then place the fried egg on top of the avocado.

Drizzle with sweet Sriracha sauce. If you prefer spicy, do it spicier! If not, then just drizzle lightly.

*One avocado can make anywhere from 1-3 slices depending on how much avocado you put on each piece of bread.
*You can also adjust how the egg is cooked according to how you prefer it (scrambled, fried, over easy, etc.)
