I can’t be the only person who seems to always have limited time? Right?

Unfortunately, having limited time is a disaster when you are wanting to lose weight. The easy stuff to make and grab on the go, tend to be unhealthy while the healthy stuff tends to be the hard stuff to make.

I get it. I am a nursing student. Finding time to sleep is hard enough let alone cooking healthy meals (for one, none the less).

Although I have yet to be able to solve the “for one” part, I did solve the easy, healthy dinner part of the equation. And yes, the recipe is in fact delicious and incorporates everyones favorite meal- TACOS!

This easy keto dinner recipe will be your next go-to for the busy nights with your family.

One thing you will all learn about me is that I am a woman of convenience. I love meals that I can make in less than 30 minutes, enjoy, then save for another meal later in the week (left overs, convenient, right? ;P).

Welp, here it is! The crustless taco pie recipe that is both an easy keto recipe and a keto dinner recipe!

Taco Pie

This is a delicious easy keto dinner that the entire family will love!

Ingredients

  • 1 Pound Ground Beef
  • 3 Tablespoons Taco Seasoning (or one packet)
  • 6 Large Eggs
  • 1 Cup Heavy Cream
  • 2 Teaspoons Garlic Minced
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1 Cup Shredded Cheddar Cheese (or cheese of your choosing)

Instructions

  1. Preheat the oven to 375F and grease a 9 inch pie pan.

  2. Brown the ground beef in a large skillet over medium heat until no longer pink. Break up the ground beef using the back of a wooden spoon. 

  3. Add taco seasoning and stir until well combined then turn the stove to low and continue to cook for a couple more minutes. 

  4. Once the meat is finished spread the beef in the pie pan

  5. In a separate bowl mix the eggs, cream, garlic, salt and pepper. When mixed thoroughly, pour over the beef mixture in the pie pan. Cover the mixture with cheese of your choice. 

  6. Bake for 30 minutes or until the center is set and cheese has browned. 

  7. When finished cooking, garnish with your choice of toppings (tomatoes, lettuce, sour cream, avocado or guacamole). Enjoy!
