We’ve all heard it before, ” Breakfast is the most important meal of the day.”
So why is it that often our breakfast is one of the things that we are first to neglect when we are busy?
I have found that it can be so much easier to simply meal prep a breakfast, than you don’t have to worry about what is happening on a certain day.
Am I running late? Thats fine, I can grab my breakfast and bring it on the go with me.
This is one of the meal prep breakfasts that I love. An easy breakfast sandwich that is perfect for busy weekdays.
All I do is prep these breakfast sandwiches on the weekends, wrap them in tin foil and freeze them until I am ready to eat them. I unwrap them, put them on a paper plate and microwave them for 1 minute and 15 seconds on each side on high.
What I love about these sandwiches is that you can customize them how you like them. I LOVE pork roll so I always use that on my sandwiches. However, others might enjoy bacon or sausage. Either way, customize how you prefer!

Easy Breakfast Sandwiches
Easy, meal prep breakfast sandwiches that you can easily customize!
Ingredients
- 10 Large Eggs
- 1/2 Roll Taylor Ham (Pork Roll) *You can switch out your meat for whichever type you prefer
- Pepper to taste
- /4 Cup Shredded Sharp Cheddar Cheese
- Sliced Sharp White Cheddar Cheese *You can change the cheese for whichever flavor you prefer
- Sliced Bread of your choosing
Instructions

In a large skillet over medium high heat scramble your eggs. While your eggs are cooking add 1/4 cup of shredded sharp cheddar cheese and your cracked black pepper.

In a separate skillet, cook and chop your meat (if needed).

Once everything is cooked, Portion out the eggs, meat and cheese slices onto the separate bread slices. Wrap in tin foil (or place i tupperware containers and place in the fridge.

When you are ready to eat, unwrap the sandwich from the foil and put on a microwaveable plate. Cook on high for 1 minute and 15 seconds or until the sandwich is no longer frozen.
