One of my family’s all time favorite things is lemon loafs. Or anything lemon flavored in general. Either way, I decided to play around with a lemon loaf recipe and got one that was absolutely delicious!

When I decided to play around with a lemon loaf recipe I had been looking to make something for the guys (and gal) that work at my barn. They are such hard workers and they take such good care of my opinionated and sometimes difficult horse that I always try and bring them treats when I can.

If you are thinking that this sounds an awful lot like bribing them to like my horse, then you’d be correct. I am in fact bribing them to like my horse and I have no regrets. I need all the help I can get..

But back to the story at hand, I wanted something easy to make as I had a ton of stuff I had to do for homework. I had decided to do some sort of mini loaf as I had just gotten mini loaf pans and was super excited to try them. Then decided that everyone loves lemon and set on my journey of creating a delicious lemon loaf.

And boy, was it delicious. It was one of the moist cakes that I have ever made and it was full of lemon flavor.

And to prove just how good they were, one of the guys told me when I saw him at the barn the next day that he actually isn’t a fan of anything bread-like. But he decided to try the treat I made him and he said he had eaten the entire loaf in a span of five minutes.

And he doesn’t even like bread! That’s how good this recipe is!

Trust me, you will love this lemon loaf recipe just as much as my family ( and barn friends) did!

Ultimate Lemon Loaf

This lemon loaf is super moist and super easy to make! It is light and fluffy and perfect for any party, brunch or to give as a gift! It will be loved by everyone!

Ingredients

  • 3 Large Eggs
  • 1 Cup Granulated Sugar
  • 1 Cup Sour Cream
  • 1/2 Cup Vegetable Oil
  • 1 Large Lemon, zested
  • 2 Tablespoons Lemon Juice (or Juice from 1 Lemon)
  • 1 1/2 Cup All Purpose Flour
  • 2 Teaspoons Baking Powder
  • 1/2 Teaspoon Salt

Lemon Glaze

  • 1 Cup Powdered Sugar
  • 2-3 Tablespoons Lemon Juice

Instructions

  1. Preheat your oven to 350F. Spray a 9X5 in loaf pan with nonstick cooking spray. If you are choosing to do mini's, simply spray your four mini loaf pans and set aside. 

  2. In a electric mixer, add eggs, sugar, sour cream, oil and beat until smooth and fluffy. Next, add in the lemon juice (or extract), lemon zest and stir well to combine. 

  3. Mix in flour, baking powder, and salt on low until just combined. 

  4. Pour batter into prepared baking pans. For the mini pans, bake for 20-25 minutes or until tooth pick comes out clean. For the full sized loaf pan, bake for 45-50 minutes. If you choose, you can tent foil over the loaf in the last 10 minutes to prevent excess browning. 

  5. Allow the loaf to cool in the pan on top of a cooling rack for at least 30 minutes before flipping the loaf out to finish cooling. Let cool before glazing. 

Glaze:

  1. For the glaze, in a medium bowl, combine the powdered sugar and lemon juice until smooth. 

  2. Evenly spread or drizzle over the bread before serving. 

Shop the Products:

9 X 5 Inch Loaf Pan: I love my stoneware pans. These pans are great for baking (there are pans for cookies/pizzas, etc. too). These pans are meant to more evenly distribute the heat and cook your food more evenly and help prevent burning. They are awesome! I have a muffin pan, and a flat stoneware pan for cookies and pizzas.

 

Drizzler: If you are choosing to drizzle icing over your loaf, this is an awesome tool. It can drizzle anything from a glaze to a chocolate mixture. I use it on cookies and cakes too.

 

 

 

Kitchen Aid Mixer: If you have a history with my recipes, you know that I LOVE my kitchen aid mixer. It makes my life 20X easier. Trust me.

 

 

Cooling Racks: These cooling racks are awesome because they are stackable and are super easy to clean and store.

 

 

 

This Ultimate Lemon Loaf recipe is absolutely amazing I cannot begin to tell you how moist this recipe is. It literally converted a person who dislikes bread into a bread eater. Thats how good it is!
