They say breakfast is the most important meal of the day and I agree. If you start your day off with a sweet treat, the rest of your day is guaranteed to go smoothly ;).

I have met people in my lifetime that consider doughnuts to be too sweet for breakfast and consider them more of a dessert. I’m not sure how I am friends with these people, but at least they didn’t say they don’t eat doughnuts at all...

And if you think I am lying about having a sweet treat to brighten your day, just know that when I made these amazing lemon blueberry baked doughnuts my mom had been having a rough morning. When I asked what I could do, she claimed that doughnuts would make her feel better. So I made some doughnuts.

And everything in the world was made right. 

Is it borderline stress eating? Maybe. But I never claimed that it was the right thing to do.. Just sayin’.

Now back to the delicious lemon blueberry baked doughnuts. These doughnuts are super easy to make and my family loved them.

These doughnuts have a delicious lemon glaze on them that enhanced the slight lemon flavoring of the doughnuts. And we all know that lemon and blueberries together are a match made in heaven.

Lemon Blueberry Baked Doughnuts

Lemon Blueberry Baked Doughnuts

Delicious and easy breakfast treat that your whole family will enjoy! Perfect for any brunch or breakfast party. The perfect combination of blueberry and lemon makes this doughnut recipe amazing!

Ingredients

  • 1/4 Cup Salted butter, melted
  • 1/4 Cup Vegetable oil (or canola)
  • 3/4 Cup Granulated sugar
  • 2 Large Eggs
  • 2 Teaspoons Vanilla Extract
  • 1-2 Teaspoon Grated Lemon Zest
  • 1 Cup Milk (buttermilk or regular)
  • 2 2/3 Cup All Purpose Flour
  • 1 1/2 Teaspoon Baking Powder
  • 1/4 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1 Cup Fresh Blueberries

Glaze

  • 2 Cups Powdered Sugar
  • 1-2 Teaspoon Lemon Zest
  • 5 Tablespoon Lemon Juice

Instructions

  1. Preheat the oven to 425F and grease your doughnut pan with nonstick spray or oil. 

  2. In a electric mixer, combine butter, oil, and sugar and beat until smooth and fluffy.

  3. Add in eggs, vanilla, lemon zest, milk, flour, baking powder, baking soda, and salt. Mix together until just combined. 

  4. Add in blueberries and use a rubber spatula to stir in blueberries. The batter will be thick. 

  5. Spoon your batter into a large piping bag (or makeshift piping bag using a plastic Ziploc bag), cut off the end of your bag so it is large enough to get blueberries through the opening (1/2-3/4" wide). Pipe the batter in once around each doughnut hole. The batter shouldn't fill the doughnut hole completely as they'll expand when baking. 

  6. Bake the doughnuts for approximately 7-8 minutes or until a toothpick comes out clean. Let cool in the pan for 10 minutes before placing them on a cooling rack to cool completely. 

Making the Glaze

  1. In a medium-large bowl (wide is better than deep), combine sugar, zest, and lemon juice. Stir together. You want your glaze to be thin enough to evenly coat your doughnuts but thick enough to dry and become hard to the touch. If you need to, you may add more lemon juice if the glaze is too thin. 

  2. When the doughnuts are completely cool, dip the tops of the doughnuts into the glaze and turn them right side up again so the glaze runs down the sides. Set aside and let the glaze set. Or not, thats cool too! 

  3. Notes: If you are making these ahead of time for an event, make the doughnuts, let them cool and store them in a airtight container. Make the glaze and glaze the doughnuts a few hours before you serve them. These doughnuts can be stored in an airtight container with the glaze on them as well. 

Shop the Products:

Doughnut Pan: This pan is great for baking doughnuts. This gives you mini doughnuts so if you are expecting regular sized, then you will have way more than you bargained for. It was super easy to clean and it is a nonstick pan which is amazing!

 

Decorating Set: To be honest, I use plastic disposable icing bags that you can get at Kingsoopers, mostly because I don’t want extra stuff to clean and I use icing bags way too often to clean these suckers all the time. However, if you want to save the planet and get reusable ones, these are awesome!

 

 

 

Kitchen Aid Mixer: I use my kitchen aid mixer ALL THE TIME! Especially when baking since there are so many ingredients. This is the epitome of working smarter not harder, plus the mixer lasts FOREVER! Seriously, I have had mine for years.

 

 

Mixing Bowls: I used the medium bowl from this set to make the glaze and it was the perfect size and depth for dipping the doughnuts in the glaze. Plus, they are super easy to clean.

 

 

 

Rubber Spatula

 

 

Cooling Racks: These cooling racks are awesome because they are stackable which saves a bunch of space! As a side note, when you are glazing the doughnuts, if you don’t want to be cleaning glaze off these when you are done, then wrap the cooling racks in foil and then you can just peel the foil off and throw it away when you are ready.

 

 

These lemon blueberry baked doughnuts were one for the books! They were so delicious and easy to make, especially compared to fried doughnuts! My family loved them and we couldn’t stop eating them! Hopefully, you have more self control when you make them!
