If not, you are surely missing out. One of the first things I learned to bake in high school were cookies. Oatmeal butterscotch scotchies to be exact.

And the original recipe that I used? you guessed it. It was the recipe from the back of the butterscotch chips bag.

And they were delicious.

However, I recently changed the oatmeal butterscotch scotchies a little bit and my family was completely amazed how the little changes in the recipe could make such a huge difference in the flavors.

The first thing my mom had said was, “Did you change the recipe?” When I responded that I had, she was completely blown away and she gushed over how much better they were.

Ingredients

  • 1 1/4 Cup All Purpose Flour
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Cinnamon
  • 1 Cup Margarine (or butter), softened
  • 3/4 Cup Granulated Sugar
  • 3/4 Cup Packed Brown Sugar
  • 2 Large Eggs
  • 1 Teaspoon Vanilla Extract
  • 2 Cups Quick Oats
  • 1 Package Butterscotch Morsels

Instructions

  1. Preheat oven to 375F.

  2. In a small bowl, combine flour, baking soda, salt, and cinnamon. Whisk to combine.

  3. Using your electric mixer, beat sugar, brown sugar, margarine (or butter), eggs and vanilla extract. Beat until smooth. Slowly add in the flour mixture.

  4. Add the morsels and quick oats. Stir to combine.

  5. Take approximately one tablespoon of dough and roll between the palms of your hands in order to roll the dough into a ball. Place on your baking sheet or baking stone

  6. Bake for 7-8 minutes for chewy or 9-10 minutes for crispy cookies. Enjoy!

  7. Notes: I use margarine when baking cookies as it makes the cookies more moist. I also prefer to bake cookies on a baking stone as it cooks the cookies evenly and helps prevent burning.

Other Products That I Used and Loved With This Recipe:

Kitchen Aid Mixer: I love my kitchen aid mixer! I use it every time I bake something and it has lasted YEARS! And trust me, I do A LOT of baking…

Baking Stones: I use baking stones when making pizzas or when baking cookies. When you use a stone, it heats up more evenly than a regular baking sheet and cooks cookies more evenly. It also helps to prevent burning of whatever it is you are baking as well!

Mixing Bowls: I feel like I am repeating myself ever time I put these bowls on this list. I use them for everything and I do love them. Seriously. They are amazing.

I hope you guys enjoy these delicious oatmeal butterscotch scotchies as much as my family did. I honestly did not expect my slight changes to the recipe to have such a huge impact, but they did!
