Have you ever wondered why chicken quesadillas seem so much tastier when you buy them?
You don’t think it’ll be hard, right? I mean, chicken and cheese on a tortilla heated up. Why can’t I seem to get it to taste like the quesadillas from Chipotle, Qdoba or any other restaurant?
Well, I have yet to make a plain chicken quesadilla taste as good as theirs, BUT I do make a damn good chipotle chicken quesadilla.
That counts for something, right?
Side with some homemade guacamole, chips and maybe a margarita and you are GOLDEN!
Plus, these chicken quesadillas are super easy to make! You can make as many or as little you want and keep the leftover chicken filling for a day in the future.
And for those of you wondering just how spicy these delicious chipotle chicken quesadillas are, they can be made extra spicy for the heat lover, or mild spicy.
This recipe can also be made keto by simply changing out regular tortillas for keto tortillas or foregoing the tortilla all together!

Chipotle Chicken Quesadilla | Easy Dinner Recipe

Chipotle Chicken Quesadillas | Easy Dinner Recipes
These chipotle chicken quesadillas are amazing! You can't go wrong with these and they are healthy too!
Ingredients
- 3 Tablespoon Olive Oil
- 1/2 Large Yellow Onion, Chopped
- 1 1/2 Teaspoon Chopped Garlic
- 2 Large Jalapeno Peppers, Chopped
- 1 Can Diced Tomatoes (or 2 chopped tomatoes)
- 2 Tablespoons Honey
- 3 Cups Cooked, Shredded Chicken
- 1 Teaspoon Salt
- 1/2 Cup Chopped Cilantro
- 6 10- inch Round Tortillas
- 4 Cups Shredded Mexican Cheddar Cheese
Instructions

In a large fry pan over high heat, pour the olive oil in the center of the pan and add the onions. Cook until the onions are soft then add the garlic. Cook 1 minute longer before adding the jalapeno peppers and tomatoes.

Cook until most of the liquid from the tomatoes has evaporated and add the chicken, honey, salt and cilantro. Mix well and turn the heat to low.

In a separate fry pan, over high heat, spray with nonstick cooking spray and lay a tortilla flat on the pan. Cook slightly until the tortilla is warm to the touch (but not crispy). Add 2/3 cup of cheese to one half of the tortilla. Spread a generous amount (approximately 1/2 cup) of chicken mixture over the top of the cheese on the tortilla. Fold the other half of the tortilla over top of the chicken and cheese mixture. Cook until the tortilla is crisp and golden, then flip over and cook the other side.

Repeat with the remaining tortillas and mixture.
