I would like to start off by saying that I’m not sure that I have ever had a “proper” blondie before I made this recipe.
To be honest, my only education on a blondie was from the Nancy Drew movie when she was trying to get documents from the hospital. She had this perfect blondie, in a perfect square with absolutely no crumbs. Pretty impressive.
Either way, blondies were never really on my radar, I am more a milk chocolate girl myself.
HOWEVER, I saw a delicious looking white chocolate blondie recipe in the cookbook “So Much To Celebrate” by Katie Jacobs, and decided to do my own play on the recipe; and the butterscotch blondie was born.
I have to say, I think I did a pretty good job considering my nonexistent experience with blondies…

I added butterscotch to this butterscotch blondie recipe simply because I am not a huge fan of white chocolate. I only like white chocolate in small amount and wasn’t sure I would like a recipe that revolves around white chocolate.
This is how I came to the butterscotch blondies. I love butterscotch scotchies (and butterscotch chips in general) so I figured, “why not”?
This recipe is super easy to make and all the ingredients are usually pantry staples which makes it perfect for the whimsical baking sessions or cravings.
Butterscotch Blondies

Butterscotch Blondies
Ingredients
- 3/4 Cup White Chocolate Chips
- 1/4 Cup Butterscotch Chips
- 1/2 Cup Salted Butter
- 3/4 Cup Sugar
- 2 Large Eggs, room temperature
- 1 1/2 Teaspoon Vanilla Extract
- 1/8 Teaspoon Salt
- 1 1/2 Cup All Purpose Flour
- 1 Cup Pecans
Instructions

Preheat the oven to 325F. Grease a 8 X 8 (or 9 x 9) inch pan.

Place the white chocolate chips, butterscotch chips and butter in a microwaveable safe bowl. Place in the microwave for 30 second intervals, stirring after each interval) until the mixture is melted and smooth.

Allow to cool for 1 to 2 minutes.

Add the sugar and using a rubber spatula, mix until well combined. Then, stir in the eggs and vanilla. Finally, add in the salt, flour, and pecans (the pecans can be chopped if you prefer) and stir until well combined.

Pour the batter into the greased pan and place in the oven for 35- 40 minutes. Check at 30 minutes and if the edges are starting to brown, you can put foil over the pan while the blondies finish cooking for the remaining time.

The blondies should be golden brown on top and slightly soft in the center. Enjoy!

Mixing Bowls: These mixing bowls are microwaveable and they are dish washer safe. They come in sets of three, each a different size and are easily stored. I use these bowls all the time when I am baking, especially when I am baking and using the microwave to soften or melt ingredients.
Rubber Spatula: I am not going to lie, I have this in about four different sizes, two of each size. I went through all of my cooking and baking tools recently and there were a bunch of these. And no, I didn’t get rid of any..

It is an awesome cookbook with amazing recipes in it, especially if you are an entertainer! This book is all about recipes perfect for entertaining guests. She also goes through different party ideas and celebrations.
