However, one of the things that I do love is chowder and soups! Although chowders can be made year round, there is something about cold days, snow and sweatshirts that make chowders so much better.
Am I the only one who thinks this?
Either way, this recipe is perfect for the chowder fix and if I am being honest, I made it on a 80+ degree day and it was still delicious. Trust me.
This chowder is a great keto dinner recipe and is different from anything else you will try. The buffalo chicken chowder was awesome and definitely a keeper.
I got this amazing recipe from All Day I Dream About Food and besides doubling the ingredients and using feta cheese instead of bleu cheese, there is nothing I would change about this incredible recipe!

Buffalo Chicken Chowder | Easy Keto Dinner Recipes

Buffalo Chicken Chowder
Ingredients
- 2 Tablespoons Salted butter
- 2 Stalks Celery, chopped
- 1/2 Cup Onions, chopped
- 3/4 Teaspoon Salt
- 1/2 Teaspoons Black Pepper
- 1 Tablespoon Tomato Paste
- 3 Cups Chicken Broth
- 1/4 Cup Buffalo-style wing sauce
- 4 Ounces Cream Cheese, softened
- 1 Cup Heavy whipping cream
- 3 Cups Chopped rotisserie chicken
- Chopped Celery, for garnish
- Crumbled Feta Cheese, for garnish
Instructions

In large saucepan over medium heat, heat the butter until frothy. Add the celery and onions and saute until the vegetables are tender, about 4 minutes. Season with the salt and pepper.

Whisk in the tomato paste until well combined, then add the broth and Buffalo sauce. Bring to a boil, then reduce the heat to a simmer.

Place the cream cheese in a blender or food processor and add about 1 cup of the hot broth. Blend until smooth, then add the cream cheese mixture to the saucepan.

Stir in the cream and bring back to just a simmer, then stir in the chopped chicken and heat briefly to warm through. Divide the soup among 6 bowls and garnish with chopped celery and feta cheese.
