Over the holidays, I often give gifts of sweet treats. Anyone else? Although in theory they seem like they would be cheaper, I am pretty sure if you make enough sweet treats, that is not the case.

However, with my extended family we only do “family gifts” and because there are various people on diets and allergies to chocolate (terrible, I know..) often times fruit baskets from Harry and David are sent.

This is great except after Christmas, we have so much food that all has an expiration on it. So the times comes where I go looking for the perfect recipes involving things like apples.

And because we all know how much I love sweet things, I definitely didn’t go looking for a healthy apple muffin recipe.

This Apple Cinnamon Glazed Muffin recipe was absolutely incredible. It was fairly easy to make, but it used up 2-3 of our apples that we got in our fruit baskets and because I made them before January 1st, the calories didn’t count either ;).

Win- win.

I found this amazing apple cinnamon glazed muffin recipe from the blogger Colorado Kelly. The muffins came out perfectly moist and full of amazing sweet cinnamon flavor.

These apple cinnamon glazed muffins were definitely worth the time to make them. Although they were not hard to make, they did seem slightly time consuming. Either way, they were delicious and I will definitely be making them again.

Food Chopper: I used this food chopper to chop up the apples. I don’t like big chunks of fruit (or anything for that matter) in my muffins, so I used the food chopper to make the apple pieces very small and fine. Yes you can do that with a knife, but I will tell you it will take a helluva lot longer than this handy dandy tool. Work smarter not harder…Just sayin.

 

 

 

 

Muffin Pan: As you can see in the pictures I used my stoneware muffin pan, however Pampered Chef no longer sells those. BUT, I do have their other muffin pans and they also work super duper well!

 

 

Mixing Bowls: Although I used my electronic Kitchen Aid Mixer to mix the batter, I did use my small clear bowl from this set of three to make the glaze that goes on top of these delicious muffins. I love the bowls because they store super easily but also because they clean easily, are dishwasher safe and they come in a set of three different sizes.

 

 

 

Kitchen Aid Mixer: I love my kitchen aid mixer. I cannot say that enough. I LOVE MY KITCHEN AID MIXER. It is an incredible tool and every baker should have one. Trust me. You can go through on any of my baking recipes and see that I use this tool ALL THE TIME. It makes life so much easier.

 

 

I hope you guys love this apple cinnamon glazed muffin recipe as much as I did. It was absolutely delicious and perfect for Fall or Winter. The apples helped keep the muffins moist and the touch of cinnamon kept these delicious muffins sweet.
