A perfect soup recipe for cool Fall and Winter evenings!
In a frying pan (or stock pot), cook (and crumble) the sausage, onion, pepper, diced tomatoes and garlic until the sausage is browned. Add the black pepper to taste or 1 teaspoon of pepper. Once everything is cooked through, drain the grease.
Add the beef broth and tomato paste and let cook until boiling lightly. This may take 10- 15 minutes. Stir occasionally.

If you choose to cook this in a crockpot, simply cook the sausage, onion and garlic in a frying pan over medium heat for 8-10 minutes (or until sausage has cooked). Drain the fat and transfer ingredients to a slow cooker. Add the rest of the ingredients to the slow cooker and stir together. Cook on low for 7 to 8 hours.
