Does anyone else love casseroles as much as I do?
There is something about them that makes for a wonderful comfort dinner. Plus, they are almost always super easy to make..
This Veggie and Chicken Loaded Casserole is a perfect healthy casserole recipe that everyone in the family will love!
At first, I wasn’t sure how greek yogurt would work in the casserole (in place of the traditional sour cream or heavy cream) but to be completely honest, we didn’t taste it AT ALL!
This one little substitution of greek yogurt is a huge part of what makes this veggie and chicken loaded casserole much healthier than others. However, if you really love sour cream or heavy cream, you can always substitute ingredients based on what you like.
Also, with this delicious casserole I used zucchini and squash as my main vegetables, however you can use cauliflower, broccoli, carrots, cucumbers or any other vegetable that you prefer.

-
Preheat oven to 375F. Grease a 9 X 13 baking dish.

In a large mixing bowl, add eggs, yogurt, and milk. Stir until the ingredients are completely mixed. Add the shredded rotisserie chicken and 1 1/2 Cups of the shredded cheese. Once this mixture is combined, add the cooked vegetables and stir until completely mixed.
