What can I say, I am on a casserole role this week. I totally forgot how easy keto casseroles are to make and they are always so delicious! Plus, they make me feel like Fall and Winter are coming, which makes me super excited!

Am I the only one?

Well, either way, this Jalapeno Popper Chicken Keto Casserole was not one to disappoint. It was so easy to make and was ready in no time! Perfect for those busy weeknights or simply because you don’t feel like cooking.

Plus, it is healthy, so that is ALWAYS a plus!

Jalapeno Popper Chicken Casserole | Easy Keto Casserole

Ingredients

  • 5 Large Boneless Chicken Breast, Chopped into bite sized pieces
  • 12 Ounces Cream Cheese
  • 1 Cup Sour Cream
  • 1/2 Cup Shredded Cheddar Cheese
  • 10 Pieces Pre-Cut Cooked Bacon Strips
  • 1/2 Cup Jalapeno minced and sliced
  • 1 Tablespoon Minced Garlic
  • 1/2 Teaspoon Sea Salt
  • 14.5 Ounce Can Diced Tomatoes w/Jalapenos

Toppings

  • 1/4 Cup Shredded Cheddar
  • 5 Strips Pre-Cut Cooked Bacon Strips
  • 1 Diced jalapeno (optional)

Instructions

  1. Chop up the raw chicken. Combine the diced raw chicken, cream cheese, sour cream, bacon crumbles, shredded cheddar cheese, jalapeno, can of diced tomatoes, garlic powder, and sea salt in a large mixing bowl

  2. Pour into a greased 9x13 baking pan. Top with the cheddar, bacon and sliced jalapenos (optional). 

  3. Bake at 375F for 40 minutes or until bubbly and hot.

    Made it! Drained the liquid from the tomatoes and jalapenos. Cooked the casserole for an hour covered because the recipe called for raw chicken. Added the topping and cooked an additional 15 uncovered. Serverd with zucchini noodle. It came out perfect.

    Really good recipe (def drain the tomatoes first), though FYI both my macro app and a separate nutrition calculator have clocked this recipe at 10g net. Don’t know how one could come up with 2g from this recipe, especially given the tomatoes.
